The Fluting Grip

This grip is used when you're carving decorative patterns into a vegetable of fruit. It is most commonly done with a paring knife or turning knife. 

  1. With the edge of the knife facing away from your hand, rest the tip and middle segment of your knife-hand index finger against the middle of the blade. Place the tip of your middle finger just below the tip of your index finger. 
  2. Press your knife-hand thumb against the blade, holding it against your index and middle fingers. 

The fluting grip is similar to holding a pen, but with the major difference, a pen is held at an angle, with the middle resting against the soft fleshy spot between your thumb and index finger, while a knife in the fluting grip is help so that the blade is vertical.
