Used for deboning chicken or fish and removing fat or sinew. Tapered pointed blade to provide the perfect design to easily slice through meat joints. The blade is made from a high-carbon, stain-resistant steel that has 56° Rockwell hardness for excellent edge retention.

The Pro series is tailored to professionals, with special knives for the restaurant/catering trade.
